Yummiest Muffins

These muffins are my favorite. My sister found the recipe in Martha Stewart. The secret ingredients are vanilla and orange zest. Both flavors are subtle but the combination is divine. It just gives the muffins that certain je ne sais quois.

There's nothing tricky about the recipe, although it will probably require a special trip to the store as most people don't keep all these ingredients around

In a large bowl, combine:
11 tbsp. melted butter (no wonder they're good)
1 1/2 cups brown sugar
1 1/4 cup plus 2 tbsp. buttermilk
2 large eggs
2 tsp. vanilla
1 tbsp. orange zest

In another bowl, stir together:
2 cups flour
1 1/2 cups wheat bran
1 1/2 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt

Stir the dry into the wet, then gently fold in:
1 1/2 cups berries (I used mixed frozen berries, but you could use whatever you can find--cran, rasp, blue, straw, scnozz (for all the fans of the original Willy Wonka movie))

Spoon the batter into 18 muffin cups and bake in a preheated oven at 350 for 30 minutes.

Danielle--Anne got me the same cake plate for Christmas that Travis got you for your anniversary. Hmmmmm.

Please give me a tip on creating orange zest -- am I just lazy and think it's a pain, or do I lack the proper tool? I usually leave it out of things, but I know I shouldn't for optimal flavor.

I just wanted to say that while the muffins so indeed look divine, I most appreciated the Willy Wonka shout-out. By the way, I found the new one to be a little disturbing. Also, I can't believe we have the same cake plate! I love milk glass. I was super sad when Trav broke the first one his mom gave me, but happy happy happy to find an almost identicle one on EBAY. love ebay. Keep up the good work.

ps. I was just thinking that maybe you should get Travis a cake plate for his birthday like the one I gave Anne for her Birthday...I am pretty sure that would complete the circle of life.

i've been quietly reading your blog for a few weeks and i love it!!!!! i am going to try and make these yummy muffins and i have a question - can you use all bran cereal in the recipe?

Meta--I'm not sure, but I suppose you could. You should probably add the cereal to the wet ingredients and let it soak for a bit then add the other dry ingredients. Let us know how it turns out.

I made the muffins for breakfast this morning. The guests loved them. All the wheat bran might make you hesitate to try them if you are not a big bran eater, but the butter makes them super tasty! Thanks!

I made these muffins just yesterday and they were so yummy! I couldn't find wheat bran at my grocery store so I used oat bran instead and they still turned out great!
